Add the name Stumptown Coffee to the growing list (both real and possible) of tenants eyeing Universal CityWalk. The tourist walkthrough has seen a boom of recent activity as parent company NBCUniversal looks to land with a youthful, more engaging consumer base, and now one of the most recognizable brands in the coffee industry might be in line for a new foot-traffic heavy destination.
*Update: A rep for Universal says that Stumptown will not, it seems, be an official tenant at Universal CityWalk, but rather their products will be sold within Voodoo Doughnut.
The folks behind Inside Universal have been all over the changes happening at CityWalk, which over the past year or so have included the arrival of chef Ludo Lefebvre’s LudoBird fried chicken concept, as well as a fast casual Chinese concept called Dongo Kitchen. Another Portland transplant, Voodoo Doughnut, is slated to arrive rather shortly.
It’s actually in a job posting for Voodoo Doughnut that the news of Stumptown’s potential arrival leaked out, alongside the opening of a Menchie’s Frozen Yogurt as well. Reading through the job post (which was captured by Inside Universal), you’ll see the opening is for an Assistant Manager of Food Operations, with the responsibilities listed in part as:
"… to effectively assist in the management of all operational activities for Voodoo Doughnuts, Menchie’s, and Stumptown Coffee located on CityWalk."
That certainly sounds like a standalone Stumptown is coming, but it’s possible that there’s something different in the works here. Eater reached out to Stumptown to confirm if they are indeed opening at Universal CityWalk (and touched base with the Menchie’s team for good measure), but so far hasn’t heard back.
