One of LA’s Best Butchers Goes Solo With Upcoming Melrose Meat Shop

Opening Belcampo butcher Jered Standing is close to opening up his own meat shop on Melrose, with a slated arrival for spring seeming more and more likely all the time.

Called Standing’s Butchery, the space takes over an empty storefront just east of La Brea. It’s a suddenly bustling couple of blocks, with a new coffee shop named Basal coming online right next door at about the same time. Not far away to the east is a new Nobu joint hitting across the street from Chi Spacca.

The Santa Clarita native certainly has some pretty prodigious skills, as you can see from his active Instagram page. He has also done much to usher in the modern era of upscale local butcher shops in Los Angeles, from Belcampo at Grand Central Market (where Standing left nearly a year ago) and the early Lindy & Grundy to today’s options at places like the Cannibal in Culver City and Gwen in Hollywood.

When Standing’s is up and running, expect a slick space with meat as the main focus, often in preparations not much seen outside of this one-off spot. No official word on hours yet, but you can peruse their opening shots on Instagram here.
