You may well have driven past Happy Taco at one time or another and not even realized it. The Hoover Street spot has been under heavy construction for well over a year, but as of the turn into 2016 they finally got around to flicking the lights on and serving some food.

You’d be hard-pressed to miss Happy Taco now, considering the place is going for broke with a colorful exterior and scrolling LED signboard. The execution is still pretty straightforward — walk-up window, outdoor seating only — but they use Square (just like some street vendors these days) and maintain an active social media presence.

Similarly, the food has also been slightly modernized, with new takes like birria nachos, carnitas fries, and an assortment of fusion tacos like bahn mi, kimchi, and Korean (aka bulgogi). You  can see the full menu board here.

Happy Taco also serves breakfast, which means they open daily at 9 a.m., and run until roughly 10 p.m. most nights. Friday and Saturday evenings, the stand stays open until after last call.
