Ricardo Valdes has taken the reins at Downtown’s L.A. Chapter, the restaurant inside the Ace Hotel on Broadway. Valdez will act as executive chef under Ken Addington, the overall chef/partner who hails from Five Leaves in Brooklyn, and takes over from Micah Fields, who was previously installed in the position.
Prior to his move into L.A. Chapter late last fall, Valdes spent time under Dominique Crenn at Abode in Santa Monica, and most recently as chef de cuisine at Delancey in Seattle. An updated menu for L.A. Chapter is below.
