There’s some serious movement happening on what might be one of Los Angeles’ most anticipated projects of 2017. Verlaine, the upcoming modern Mexican restaurant from award-winning chef Diego Hernandez, is already pulling in some big names to help out around the place, and they just announced their opening timeline.
Verlaine, if you don’t know, is the upcoming LA project from the celebrated chef of Corazon de Tierra in Mexico’s Valle de Guadalupe wine region. He’s one of the most prominent people cooking in the modern Mexican style today, and his beloved Baja restaurant is consistently listed as a top-tier dining choice for all of Latin America. Now he’s partnering with Matthew Hechter and Christopher Brandon of Select Hospitality to bring Verlaine to the forefront of Los Angeles dining, pushing the concept into the former long-running Dominick’s address.
In an announcement posted over the weekend to Instagram, the Verlaine team debuted their new beverage director: Aaron Melendrez. The barman gained a big name for himself with the opening of buzzy Salazar in Frogtown, but stepped away not long ago, apparently to get ready for Verlaine.
To that end, expect Verlaine to open next month. Once it arrives, expect the growing modern Mexican scene in Los Angeles to get a big boost, as well as West Hollywood proper. The area has been booming with new concepts, from celebrity-laden Catch on down, and the arrival of Verlaine can only help.
