Pelaccio is the chef of Fish & Game, a restaurant in Hudson, New York that focuses on locally sourced ingredients. The restauranteur’s latest cook book, Project 258, follows the first three years of the restaurant’s inception, exploring the meaning of what it is to truly be a “farm-to-table” restaurant.
