If you’ve been paying any attention to chef Ludo Lefebvre lately, you’ll know that he’s been teasing on social media (and talking aloud in public appearances) about a new plan for a restaurant collaboration of sorts in Malibu. Now details are out on Coffee & Waffles, an aptly-named newcomer landing at the Native Hotel in Malibu just in time for summer.

The plan, as the name supposes, is to keep things simple by offering a tight collection of waffles to enjoy from a trailer parked on the Native Hotel’s property. There will be one simple sweet waffle on offer for $7, a savory take with ham and gruyère for $9, and a third coconut and dried shrimp iteration, also for $9. Coffee comes from local producer Eucalyptus & Pine.

The jump to Malibu is a surprising one for chef Ludo, especially for a project of this scale considering the Valley version of Petit Trois is still under heavy construction at the moment. Nonetheless it’s a fun excursion for folks looking to try some seriously casual Ludo food, and should pair perfectly with the summertime ocean vibes of Malibu.

If all goes according to plan, the Coffee & Waffles run should start up in June, with no timeline for ending as of now. The Native Hotel is a boutique Malibu option located just off PCH and not far from the beach at Paradise Cove, at 28920 Pacific Coast Highway.
