Just last week, quiet corner option Sage Vegan Bistro unveiled their new side-project: an all-vegan brewery, right in the heart of Echo Park. The emergence of a small brew system staring out onto Sunset Boulevard means big things for the neighborhood, and could make the beloved vegan eatery one of the more centrally-located breweries anywhere in Los Angeles.
To go along with Sage’s new brewery, there’s a cozy new poured cement taproom in the attached former pawn shop space that comes with built-in industrial touches, from lacquered wood booths to standing bar tops bolted to the floor with iron piping.

As of last week, guests can now enter the attached bar side of Sage Vegan Bistro either through the existing front door at the intersection, or a new entryway along Sunset. From there you can see the brew system off to the right, with six fermenters hidden away downstairs. That means most of the team’s brews are still coming, so for now you can sample a couple of options (including a habanero pilsner), while the rest of the 36 taps are used for a variety of things: wine, mixed drinks, and kombucha. The bar is fully stocked with a full booze profile too, if you’re just looking for a cocktail.
Sage Vegan Bistro’s Echo Park location currently keeps hours from 8 a.m. to 11 p.m., with coffee and vegan pastries for takeaway in the morning, transitioning into drinks and dinner later on. Those hours extend to midnight on weekends, and may jump to 1 a.m. down the line. Sage Vegan Bistro also has locations in Pasadena and Culver City.
