800 Degrees Pizza in Hollywood will reopen Wednesday, August 2 after a quick ten-day renovation, though there are some significant menu additions that add quite a bit to the casual wood-fired pizza restaurant. Think Italian-style rotisserie chicken, and a cocktail menu tailored for the Hollywood club crowd. These changes are a shift away from fast-casual experience and pivot the location more towards a sit-down dining experience.

Executive chef and founder Anthony Carron was inspired by the longstanding tradition between pizza and rotisserie chicken in Naples, saying “After visiting many more pizzerias and delving into the history of cuisine in Naples, I noticed a connection between pizza, rotisserie chicken and the use of that chicken on pizzas and salads. I couldn’t wait to incorporate my findings on our menu.”

The chicken is sourced from Palisades Ranch and guests can choose a quarter, half, or whole chicken, then select two side dishes, such as fingerling potatoes, brussels sprouts, hummus, farm greens, or quinoa tabbouleh. There are six different choices for smothering the chicken, such as Calabrian chile oil, Peruvian-jalapeno cilantro sauce, or piri piri, a spicy South African-Peruvian sauce.

800 Degrees closed its doors temporarily because Carron and new CEO Tommy Lee felt the Hollywood interior could benefit from a more elevated dining room. The marble floors are still intact, but they added brown leather booths, expanded the patio with wooden banquets, and covered the outdoor bar. In addition to beer and wine, they’ll serve renditions of classic cocktails.

800 Degrees is expanding quickly. Since 2012, Los Angeles has five additional locations, two in Nevada, as well as restaurants in Dubai, Qatar, and Japan. Once Hollywood reopens on Wednesday, it’ll maintain hours from 11 a.m. to 2 a.m.
