It looks like Hayato is finally open at the ROW development in Downtown LA. The upscale Japanese kaiseki restaurant has been slowly realizing its final form for some time now, first opening quietly as a daytime bento box takeaway. Now the whole show is here, and it looks pretty glorious.
While Hayato chef Brandon Go has yet to post publicly about his extended dinner experience, a slew of photos have been posted to prolific food forum Food Talk Central. They show a truly upscale experience, one focused on seafood, service, and sake. The intimate single-seating meal is said to take more than a few hours, and features Go serving customers directly from the bar.
Over on Resy, where diners have been able to make reservations for Go’s daytime bento boxes, there is a bit more nuance on just what the dinner side of Hayato looks like. It reads:
Our nightly omakase menu is priced at $200 per person. A 16% service charge will be added to each bill - no further tipping is expected. Reservations are available up to four weeks in advance and require a $100 pre-paid deposit per diner. Due to the fact that the seafood is special-ordered for each individual guest, all cancellations must be received 72 hours before reservation time.
Eater reached out to Go for more information on the full dinner experience, but so far has not heard back. It doesn’t look like Resy is currently offering seats for dinner service at Hayato yet either, so intrepid diners may need to give the place a ring or shoot off an email in order to try for a seat during this “soft opening” period.
