Chef Roy Choi is back in the saddle once again, this time popping up with a three-day restaurant centered almost exclusively around cult favorite snack Flamin’ Hot Cheetos.

The three-day brand partnership is called the Cheetos Flamin’ Hot Spot and it goes down in Hollywood next week, inside what will be a completely reformatted Madera Kitchen on Cahuenga. The plan is to overhaul the interior and exterior design of the building, while Choi works inside to craft a variety of novelty foods that use Flamin’ Hot Cheetos. There will be burritos (shown above), rice bowls, wings, and even slightly spiced churros on the menu. The full lineup of food can be found at the pop-up restaurant’s landing page.

The jump into a new Cheetos partnership comes at an interesting time for Choi, who (along with partner Daniel Patterson) just closed the restaurant doors on his Locol space in Watts, with plans to refocus and do catering on the side in the meantime. He’s also no longer involved at The Line Hotel in Koreatown, but has been pushing hard to bring a brand new Las Vegas restaurant called Best Friend to the Park MGM resort sometime in December.

Choi also won’t be the first Los Angeles chef to use Flamin’ Hot Cheetos as a primary ingredient, as evidenced by the new Universal Studios Halloween Horror Nights menu for this year. Popular Downey restaurant Fatima’s Grill has also been making burritos and bowls with the stuff for quite a while now, though owner Ali Elreda’s prison rehabilitation story is a far cry from the branded sponsorship opportunities Choi is undertaking.

The Cheetos Flamin’ Hot Spot pop-up starts Tuesday, September 18 and runs through Thursday, September 20, from 5:30 p.m. to midnight each day. Reservations can be made online now.
