Take a peek today inside The Shelby, the quiet newcomer that landed several weeks ago along West Third Street. The dinner and drinks destination from owner Chad England takes over for the long-shuttered Sushi Roku space not far from the Beverly Center.
For the past month, The Shelby has been doing limited service hours as they ramp up production. Chef Sascha Lyon (Employees Only, Commerson, Balthazar) is on to craft a menu that weaves from oysters on the half shell and crispy artichokes to an $18 burger, a 30-day dry aged New York strip steak, and beyond. This is mostly snackable, sharable stuff, with drinks from barman Josh Goldman backing up the food. The opening menu is below.
As for the Shelby space, expect marble tabletops, stuffed leather seats, and lots of mellow mood lighting to go along with the rounded booths and brick backdrop. Old Hollywood photos line the walls, and there’s comfortable lounge seating right up front.

Expect the Shelby to keep hours from 5 p.m. to 11 p.m. Sunday through Tuesday, with an extension to 1 a.m. Wednesday through Saturday nights. A bar food will be available from 10 p.m. to midnight.
