Downtown LA’s Hoxton Hotel Is the Hot New Rooftop Pool Party

The future of Downtown dining, it seems, rests on the rooftop bar. After years of growth the neighborhood is now positively awash in sunny, poolside dining and drinking options, including the brand new Pilot at the Hoxton Hotel.

Whereas the downstairs all-day restaurant Sibling Rival focuses on lots of space and familiar touches (think avocado toast, coffee, salads, sandwiches, and the like), Pilot will offer a three-tiered experience for loungers and poolside hangers-on; for barflies and after-work drinkers; and for dinnertime diners looking to gobble up the views. Yes, there are seafood towers involved.

Inside, the primary dining room for Pilot features a pull-back roof and nearly uninterrupted views of the city beyond, complete with big windows, lots of greenery, and a roaming bar cart for cocktail service. There’s an open kitchen to catch live-fire cooking, marble tabletops with lots of brass accents, and the kind of lush, pastel decor that has come to define Los Angeles in the past few years.

Out in the open air it’s all about the Hoxton Hotel’s deep greens, wood, and sunlight. Hotel guests and anyone stopping by can both mingle at the pool for all-day service, complete with wine, cocktails, and snackable daytime options like eggplant dips. Back inside, expect a heartier take on large-format seafoods, plus seasonal vegetables and housemade pastas from executive chef John Taube.

Sunday Hospitality’s Pilot opens on Tuesday, October 29. The Shawmut-built lounge and outdoor bar areas and pool are available daytime, while inside the sit-down portion of Pilot works dinner service only to start.
