Pizza Maestro Chris Bianco Starts Serving His Flatbreads at Downtown LA’s Manufactory

Downtown LA’s Manufactory has expanded its hours, opening up the Tartine Bianco cafe side to all-day hours while also adding takeaway goods to the open marketplace inside. The big new additions mean there’s a lot more food to enjoy right now, from Tartine lead Chad Robertson’s breads to Chris Bianco’s non-pizza “flatbreads.”

Tartine Bianco and the marketplace (with its own menu and wine bar) have only just come online, with the former working a basic menu for breakfast — think egg sandwiches, a porridge, and smoked salmon tartines – and into lunch, complete with salads, soups, sandwiches, and a patty melt on Tartine bread.

The marketplace’s U-shaped marble bar offers wine pours by the ounce as well as a tight construction of tinned seafood conservas and Chris Bianco (he of Pizzeria Bianco out of Phoenix) flatbreads. The plan is to call the elongated, sauced and cheesed dish a “flatbread’ considering it’s a true collaboration between Bianco and Robertson, rather than an accurate reflection of the pizzas that Bianco makes out in Phoenix. There’s also a robust takeaway area for all kinds of pastries, sandwiches, salads, and full loaves of bread, all surrounded by shelves of products like Sqirl jam, tea towels, and aprons.
