The wait is nearly over for chef Jeremy Fox and his many expectant fans, as Birdie G’s looks to open to the public this coming Friday in Santa Monica. The Bergamot Station stunner has been working a variety of one-off dinners and friends and family nights in anticipation of this very moment, and now it’s all coming together.

As previously discussed, Birdie G’s is Fox’s 5,000 square foot industrial palace, a personal place big enough to hold one special chef’s fully-realized dreams. The main dining room is a tall warehouse lined with art and one very open kitchen, where Fox and company turn out riffs on things like matzo brie and Texas toasts. The wide patio out front seats more than three dozen diners at a clip, and there’s also a 12-seat chef’s table, separate bar area, and private dining room in the back.

As for the menu, expect food that dabbles in Fox’s multi-varied roots, but feels perfectly of a moment to Los Angeles. That may mean, on any given night, a wandering meal that moves from chopped salads to Passmore Ranch steelhead roe caviar to a brimming Midwestern-style relish tray and a classic American 32-ounce bone-in ribeye with steak sauce on the side. Along the way there is seafood, housemade sausage with sauerkraut, spare ribs in a cherry barbecue sauce, and more. Check out a bunch of food shots below, alongside the opening menu.

Birdie G’s opens to the public for dinner on Friday, and will begin taking reservations via Resy as of this Thursday at 10 a.m.
