San Pedro’s sleepy ways are slowly disappearing, thanks to an influx of waterfront development, local pop-ups, and emerging culinary stars like the Chori-Man. And now, right next door to the popular Mexican meat-maker is Colossus Bread + Pastry, an upstart coffee and pastry spot with a fine dining background.
Colossus is the work of Kristin Colazas Rodriguez, a former Bay Area pastry chef who has been doing farmers market breads and sweets in Long Beach for some time. Her space, formerly With Love Bakery, is a long and narrow storefront with a small counter and pastry case up front stuffed with traditional croissants, kouign amann, and seasonal fruit tarts and galettes. Freshly-baked loaves are also available, along with drip coffee and espresso drinks using Heart Coffee Roasters.
For now, the focus is on dialing everything in and growing the local custom base. Ownership says that Colossus will continue to pop up at their usual Long Beach farmers market stop for the foreseeable future, but plan to grow the San Pedro main location with new menu items like breakfast sandwiches. Housemade pizzas could be in the works as well down the line, but there’s no dinner service just yet.
Colossus Bread + Pastry opens wide tomorrow in San Pedro, keeping hours from 6 a.m. to 3 p.m. Monday through Friday, and 7 a.m. to 4 p.m. on Saturday and Sunday.
