Vegan bakery Just What I Kneaded is already on the expansion path. The Frogtown spot, owned by Justine Hernandez, only opened in June of last year, but now signage is up for a second location in Los Feliz, across the street from Kismet Rotisserie.
Hernandez tells Eater that the second outlet at 4681 Hollywood Boulevard will act as a smaller retail face for the company, mostly, and that permitting and build-out are still very much ongoing. The plan, if all goes well (and that’s a big if in Los Angeles these days) is to open in the fall of this year as a “grab and go cafe.” The space will also double as a cake shop for the neighborhood, though the Frogtown original at 2029 Blake Avenue will still be the flagship, and is where much of the overall production will continue to happen.
The new location represents a speedy rise for the upstart baking operation, though the company itself has been a long time in the making. Veg Out Magazine spoke with Hernandez last summer, saying that the the vegan bakery had been in the works for more than two years. Opening in the summer of the coronavirus pandemic wasn’t ideal, Hernandez also told TimeOut, but the 1,000-square-foot former machine shop in Frogtown did offer “a little semblance of normalcy.” She added: “You can come in and still afford a coffee and a cinnamon roll and get the vibe of a coffee shop,” at least for now.
