12 Beef Noodle Soups to Warm Your Soul in LA

Stave off those harsh Los Angeles winters.

View as Map

There's a weird temperature slump in between the months of November and February in Los Angeles where some days your weather app will tell you the high will be 64 degrees, which means you need to pack a scarf. Which is to say Los Angeles doesn't really have "winter." It does, however, have nights where you will crave something beefy, something hot and something soupy. Preferably with a bed of carbs thrown in.

Look no further. In what has to be one of the most tragic ironies in the culinary world, Los Angeles happens to be home to some of the best steaming Asian noodle soups in the nation. Whether it's Thai boat noodles, Korean kalbitang or sullungtang, a spicy Chinese beef noodle soup or a nice steaming bowl of Vietnamese pho, there's a place to get beef soup noodles in Los Angeles proper. Here's a quick primer for the uninitiated.

Kalbitang at Park's BBQ

Park's BBQ is known for its gorgeously marbled meats and strong Korean cuisine in general, but if you come in at lunch you'll likely see one dish on every table: The kalbitang. The soup, which is made from boiled beef rib bones, contains cubes of beef which can be dipped in a garlicky soy sauce.

Kalbitang at Seongbukdong

It's hard enough to get a table at Seongbukdong when it's cold for all of its other fantastic Korean fare, but the kalbitang tastes like the homemade genuine article, replete with long-cut green onions and healthy chunks of rib meat.

Combination Seollungtang at Han Bat Sul Lung Tang

Still the standard bearer for the Korean beef bone broth soup in the city, Hanbat Sul Lung Tang hasn't only been around forever, its seollungtang recipe remains practically unchanged. With an almost sticky, milk-white broth and adjustable levels of green onion and salt, this might be the representative beef noodle soup in Koreatown.

Seollungtang at Sun Nong Dan

The seollungtang at Sun Nong Dan is already phenomenal enough, but add wheat flour noodles and the fact that it's open 24 hours and it's the perfect place — and perfect dish —for an after-hours bite to prevent that hangover you've been working up.

Pho Dac Biet at Pho 87

As pho goes, there are better options in SGV and, of course, in Little Saigon in Westminster. For those unwilling to make the drive (and for me, since this map covers LA proper), Pho 87 suffices quite nicely with a rich, beefy broth that can go toe-to-toe with most of the bowls in the SGV.

Oxtail Pho at Phorage

To have an upscale pho concept seems a bit antithetical to the perceived expectations of a great pho restaurant, but the bowl at Phorage in general is exemplary, and the oxtail pho is no exception. With a rich, beefy broth and meltingly tender oxtail meat and perfectly cooked noodles, it's a pho experience oftentimes surpassing its Little Saigon peers.

Beef Noodle Soup at Rodded Restaurant

The duck noodle soup is Rodded's calling card, but the beef noodle soup at this corner-occupying Thai noodle shop should be getting more rotation — the broth has an exceptionally clean, savory finish that lends itself well to the (voluntary) addition of chili pepper flakes.

Beef Boat Noodles at Sapp Coffee Shop

Sapp Coffee's boat noodles come chock full of toppings and arrive with a serious boost of spice to make it one of the more stellar boat noodle entries in Hollywood's Thai Town. Cool down the heat with one of Sapp's tasty iced tea or coffee offerings.

Boat Noodles at Ruen Pair Thai Restaurant

Though they're not particularly known for their noodle soups, Ruen Pair puts out the most fragrant and heavily spiced bowls of boat noodles in Los Angeles. With a deep savory broth accentuated by a healthy dose of star anise, Ruen Pair's boat noodles take the more-is-more approach to polarizing results. Thai ex-pats decry its inauthenticity, but the dish itself remains soupy, spicy comfort food of the highest order.

Beef Boat Noodles at Pa-Ord Noodle

For the money, Pa Ord Noodles still deliver some of the best boat noodles. The noodle shop doesn't skimp on the extras and isn't shy about adding tripe, so make sure to let the servers know if you're disinclined to offal.

Spicy Beef Noodle Soup Peking Tavern

Peking Tavern's spicy beef noodle soup is one of the stars on the menu, with thick hand-pulled noodles and a solid broth. It's a tad pricier and the portions might seem a tad smaller than its SGV counterparts, but for those who don't feel like making the drive out, it suffices nicely.

Beef Noodle Soup at Pine & Crane

Pine and Crane has received glowing reviews for its faithfulness to authentic Taiwanese cuisine, and the beef noodle soup is no exception. This savory, umami-filled noodle soup comes with baby bok choy and preserved mustard greens for balance.
