There's a weird temperature slump in between the months of November and February in Los Angeles where some days your weather app will tell you the high will be 64 degrees, which means you need to pack a scarf. Which is to say Los Angeles doesn't really have "winter." It does, however, have nights where you will crave something beefy, something hot and something soupy. Preferably with a bed of carbs thrown in.

Look no further. In what has to be one of the most tragic ironies in the culinary world, Los Angeles happens to be home to some of the best steaming Asian noodle soups in the nation. Whether it's Thai boat noodles, Korean kalbitang or sullungtang, a spicy Chinese beef noodle soup or a nice steaming bowl of Vietnamese pho, there's a place to get beef soup noodles in Los Angeles proper. Here's a quick primer for the uninitiated.

Park's BBQ is known for its gorgeously marbled meats and strong Korean cuisine in general, but if you come in at lunch you'll likely see one dish on every table: The kalbitang. The soup, which is made from boiled beef rib bones, contains cubes of beef which can be dipped in a garlicky soy sauce.

Still the standard bearer for the Korean beef bone broth soup in the city, Hanbat Sul Lung Tang hasn't only been around forever, its seollungtang recipe remains practically unchanged. With an almost sticky, milk-white broth and adjustable levels of green onion and salt, this might be the representative beef noodle soup in Koreatown.

As pho goes, there are better options in SGV and, of course, in Little Saigon in Westminster. For those unwilling to make the drive (and for me, since this map covers LA proper), Pho 87 suffices quite nicely with a rich, beefy broth that can go toe-to-toe with most of the bowls in the SGV.

To have an upscale pho concept seems a bit antithetical to the perceived expectations of a great pho restaurant, but the bowl at Phorage in general is exemplary, and the oxtail pho is no exception. With a rich, beefy broth and meltingly tender oxtail meat and perfectly cooked noodles, it's a pho experience oftentimes surpassing its Little Saigon peers.
